Our adventure kicks off with a bold move – tequila tasting in the morning. Our guide brims with passion, as she explains the intricate process of tequila making. It turns out that true tequilas are crafted exclusively from blue agave and distilled for a minimum of seven years. This means each bottle is a labor of love, as a single plant yields only a few precious bottles. Many imported brands lack either blue agave or lean too heavily on added sugars.

Tequila varieties

We sample three distinct varieties. The first embodies my preconceived notions of tequila and delivers a warm sensation that burns my throat. The second is similiar to Patron’s sweet coffee tequila liqueur. The final one, however, is a surprise. This one has an entirely different taste and defies any attempt at easy categorization.

With some Dutch courage coursing through our veins we jump into 4WD vehicles to head to a nearby cenote. The principle goal it seems is to jump or zip into the stunning water holes. I guess there was a reason they encouraged us to drink tequila!

Plummeting into the cenotes

Perched on a moss-covered step, I steel myself as I grip the cold metal of the zipline bar. The guide’s instructions are clear, and suddenly, I hurtle backwards over the cenote. The vivid shades of turquoise below are a mesmerizing blur. “Arriba!” shouts the guide, and with a shriek, I release the bar. I plunge into the cool waters of the cenote. Emerging spluttering but exhilarated, I admire this hidden treasure deep within the heart of the Yucatan jungle.

As I ascend the rickety wooden stairway, I contemplate the 5 metre high cliff jump. Jason urges me on as he recalls the “SAS, Who Dares Win” motto, I finally gather the courage, letting out a high-pitched scream as I launch myself into the water with a resounding splash. My legs shake as I exit and make my way up the rickety staircase.

Around 6,000 cenotes like these dot the Yucatan peninsula. Most are between 8 and 15 metres but some plunge to astounding depths. The deepest in Quintana Roo is the Pit at 119 metres.

After a quick change, we’re off to the next leg of our journey. Five exhilarating ziplines and three interactive bridges skim the treetops of the jungle. As we launch ourselves from the platforms, there’s no holding back the gleeful squeals of delight that escape our lips.

As we soar through the air, we embrace the rush of wind against our faces and grin manically as the camera snaps away. The resulting photos freeze in time our exhilerating antics.

As I clamber onto the ATV behind Jason, a surge of fear courses through me. I urge him to navigate with caution and brace myself. With a roar, he revs the engine, and we’re off kicking up a whirlwind of dust as we tear down the rugged, uneven track that cuts through the heart of the forest.
